Wisconsin is home to the world's most award-winning cheeses--more than 450 different varieties, types, and styles of cheeses. Dairy farming produces $20 billion each year for the state of Wisconsin. It is the first state to establish a dairy research center and is the only state which requires licensing to make cheese and has a Master Cheesemaker Certification Program. Since 90% of Wisconsin's milk goes into cheese, Wisconsin has made standard for cheese making and overall dairy product quality the most stringent. |

There is a rapidly growing segment of the dairy industry in Wisconsin known as "farmstead cheeses" which has given a new meaning to the phrase, “from cow to cheese.”
Gingerbread Jersey is one of these farmstead cheese operations. Sitting on a 53' semi trailer, our cheese plant is called “Cheese on Wheels” -- a complete mobile cheese processing unit, capable of producing and packaging up to 200 pounds of cheese per day. We have also developed a milk transport and delivery system consisting of a 500 gallon Zero bulk tank completely enclosed within an enclosed mobile trailer with an automatic wash system in place to transport the milk and hold it until needed.

We offer ultimately fresh, premium cheese and warm, squeaky fresh curds made while you watch. We also have a cappella singing CDs and tapes, local art and locally produced honey and maple syrup, a small variety of gifts, books, and educational products.
